Which Episode? Return Of The Jedi
Where would it be in film? An extension of the first assault on the shield generator.
What happens? Instead of simply bursting into the shield generator control room, Han and the rest of the Endor soldiers have to work their way through its winding corridors, taking down battalions of Stormtroopers on the way. But what makes this deleted scene so worthy of a mention is one short moment at the end. In response to the sublimely delivered "you Rebel scum", Han responds with real objection to to the derogatory phrase. Hilarious and, best of all, it comes just before the "it's a trap" scene, making one of Star Wars' most remembered scenes even funnier.
Should it have been cut? Anything that has Harrison Ford looking so aghast at an insult never deserves to be cut. Get rid of some Ewok action if you have to justify its inclusion, but this should really be in the movie.
