While Infinity War did lean rather heavily on the history between Thanos and Gamora, this officially-released deleted scene would have taken that one step further.

Reminiscing about their relationship, The Mad Titan recalled how he turned the woman before him into the fiercest in the galaxy, before he revealed his disappointment to learn that she had lied to him by keeping the location of the Soul Stone a secret.

Though it's undoubtedly a powerful scene, it almost feels right that this one didn't make the cut as it basically confirmed that Thanos truly cared about his 'daughter' (in his own strange way) and that would have undercut the impact of their scene at Vormir.

Furthermore, the similar conversation that the pair have in the completed version of the film - when Thanos is torturing Gamora - is much less expositional than this one.
