Why?

Well, because he can and it won't matter.

While Groot's death in the first movie was played for emotional effect, his "death" in the second - with the audience fully aware that he can be revived immediately - could be done for comic effect. And we already know he's impulsive and far more dangerous than he was as an "adult."

Perhaps that's the only way he'll learn?
