Why?
Pretty much the same as that point about Ego: she's a villain, so she's not allowed to survive in the MCU beyond the film she debuts in. Despite the fact that Her is a much more significant character in the comic book universe, I just can't see past Ayesha being killed at the end of Vol 2.
She's also probably way too powerful to survive when Thanos is coming (on account of her basically being a God), but even more importantly, what she represents makes her the most nailed on Dead Meat of this entire film.
She's an elitist, who believes in genetic purity and the prevailing power of her race (in other words, she's Hitler) - and when she's coming face to face with the absolute dregs of the universe, united by the power of FAMILY (coming over all Fast & Furious there), she can't win.
