7. Snowspeeder Chase

This is one I was pretty excited about when I first heard of its appearance in the novelisation of the movie, because it sounds like a really fun sequence. 

The one that's actually ended up as a deleted scene doesn't look great, meaning it was probably cut before the CGI was finished (I bloody hope so, anyway), and there's not an awful lot of context to it. 

It's Rey and Finn on a snowspeeder going across Starkiller Base, being chased by First Order troops. There's no explanation for how this happened, so you can see why it was cut and the events on the Base streamlined somewhat. Still, the way they change positions, so Rey becomes the pilot and Finn proves Stormtroopers can shoot, is a nice touch.

Also note how Finn's given Rey his (read: Poe's) jacket - aww.
