The two original Fallout games are pretty ancient relics by today's standards. In fact, if you were to take a trip down memory lane and play them now, you'd find yourself wondering how in the hell Fallout 3 and New Vegas are even a part of the same series in the way they're played and presented. The top-down, isometric-like gameplay of the originals are a far cry from the first-person sandbox worlds of the newer entries in the series. There's obviously running themes throughout the entire franchise like the post-apocalyptic America setting and large helpings of oddball humour, but simply remaking Fallout 1 & 2 in the style of Bethesda's interpretation would probably just piss off more people than it pleased. There's still hope though! There's already a modern equivalent of Black Isle Studios' original formula in the form of the rather excellent XCOM: Enemy Unknown, or to a lesser extent, Massive Chalice. How about you give 2K a call, Bethesda? Let them work on some remakes of the original while you focus on getting Fallout 4 out the door. That way, we can have the best of both worlds.
