Rockstar love their fictional plays on real-world locations, and Red Dead was no different. Texas became New Austin, and the more industrious Great Plains/West Elizabeth sections were based on the Rocky Mountain regions of Colorado, Utah, Wyoming etc.

So, using the placement of the Great Plains as a south-west jumping-off point, we can see that the new expanse of mapped territory would cover a now-fictional Louisiana, alongside some more of the New Austin area.

It means Mexico is gone (providing everything takes place on one map), and puts the onus on exploring entirely American soil - which is ripe for Rockstar's constant satire of western ideologies and inbuilt societal norms.
