Certain games know how to create a memorable, quality boss fight and Dark Souls 2 is a great example of that. Every boss battle in Dark Souls 2 is memorable in some way; whether it's the player summoning Mirror Knight or the hulking Last Giant, each boss provides a different challenge and a unique experience. Some bosses are easier than others (the first Dragonrider fight is very easy with a melee build and a fully extended arena) but most will have you cursing and scratching your heads on how to defeat them (the Last Sinner will probably be an early example of this; even with jolly co-operation, it's a tough fight). It's not just the bosses though; their arenas can also create a great experience, either with some great scenery (The Mirror Knight is hugely memorable for this) or by forcing you to be careful of your surroundings at all times (the Pursuer's cramped arena gives you little room to hide and recover). From Software delivered great boss battles in the first Dark Souls game and Dark Souls 2 doesn't disappoint either. More games should focus on making boss fights memorable and exciting, no matter where they're placed within a game's narrative. Above all else, every game should feature a 'Victory Achieved' or a 'You Defeated' screen it makes all the stress and wrecked nerves worthwhile.
