Benefits to manually walking your horse places?

Who knows, but it looks cool.

Rockstar have always been fans of adding ancillary, immersive mechanics to their games (just look at the "dog mechanics" of GTA V, or that game's entire stock market, for example).

Honestly, I can't think of any mechanical benefit to leading your horse around the place, but if nothing else, you'll be able to take your trust steed for a stroll across the wilderness.
