Maybe your wine list was accurate when it was first printed but you can't say for sure, because you've never seen any of these bottles. You might have one of the wines on there still in stock, somewhere out the back, but you couldn't vouch for its quality. Instead you hope everyone just orders "white" or "red" and doesn't get more specific. You hide the list at the start of every shift just to be safe.
