In terms of in ring action, Owens versus The Undertaker matches up very well stylistically. Both are brawlers, with a technical side to their game. On occasion, for very special spots, they'll also go to the top rope. Owens has that beautiful moonsault, which would look great in a big setting like WrestleMania. Both men are also adept at taking the action to the mat, with a range of submission manoeuvres that they could transition reversals with. That's good for someone like Taker, as it means he can work on the mat and not expend too much of his gas tank. What would also probably make most sense if for WWE to book it as a street fight. That'd fit in with the 'fight Owens fight' character and also allow the 51 year old Taker a range of short cuts. They can put on one hell of a war, just like Triple H did with Taker in their three Mania matches.
