8. Guardian Ape - Sekiro: Shadows Die Twice

I can't think of a better example in recent memory of a boss "gotcha" moment like the first time players "defeat" the Guardian Ape in Sekiro: Shadows Die Twice. After felling the mighty monkey in a pretty tense David Vs Goliath showdown, the player executes the beast by slicing off its head in a rather gruesome fashion.

Now the last time I checked, things have had their heads removed tend not to come back alive, so I alongside so many others likely put down the controller to do a little victory dance or take a sip of water after sweating out all their liquids. Yet the Guardian makes a right monkey out of you by getting back up for a second round and even picks up the sword you decapitated it with in an almost mocking gesture.

"Cheers for scratching that itch mate, here have your pen knife back"

What ensues is a boss battle where all of the previous moves now have different windups, animation steps, and range, flipping everything you thought you knew about this boss quite literally on its head. Worse still even after defeating the boss in this form, it comes back AGAIN later in the game for another tussle! YOU DAMN DIRTY APE GET IN THE BLOODY GRAVE!
