6. Do A Perfect Dodge To Trigger Slow-Motion

Straight out of Breath of the Wild, Assassin's Creed Odyssey has the same timing window-during-a-dodge-triggers-slow motion mechanic.

Where in the latest Zelda it was much easier to pull off when locked onto someone, here you just need to tap Square/X when an attack is incoming, and time will slow to a crawl. It lets you get a flurry of hits on any-sized enemy, even if you have lumbering weapons like sledgehammers and axes.

Use this in conjunction with the Spartan Kick to make VERY quick work of higher level enemies.
