Ganon is evil because he's evil. It totally works in the context of The Legend of Zelda in-game, as this malevolent force is one of pure evil; a mystical and timeless energy that cyclically returns, only to be vanquished by the combined forces of Zelda and Link every time.

Where Calamity Ganon (when you fight him) has the familiar red hair of the more human incarnations we've seen in generations past, the monstrous final version, Dark Beast Ganon, is a more imposing hog-like take on Ganon we tackled at the close of Twilight Princess or Ocarina of Time. Both are supremely cool, seeing Nintendo give Ganon the look of a creature you want to save Hyrule from through visuals alone.

It would've been nice if this more Studio Ghibli-like take was given something other than just base, abject capital-E evil (outside of knowing he was once human, thanks to King Rhoam's introductory speech), but that's also why it works so well - though it doesn't get him very high if we're talking about actual characters.
