Beric Dondarrion only has one mission: to kill the Night King. More than anyone besides Jon Snow - and perhaps even more than him - Beric is singularly focused on defeating the White Walkers, and in particular, their leader.

The difference is that, quite simply, Beric is not to this story what Jon Snow is. He cannot be the one to kill the Night King. And therefore he cannot survive. He's going to be in the heat of the action, he's going to do anything and everything to succeed, and he's someone who has died so many times that he has no fear of it happening again, even knowing he won't be brought back. Beric going down, flaming sword in hand, would be a fitting end to his story, and a satisfying death for the episode.

His death could even tie into the Hound's journey - it'd be quite symbolic if he passed the sword on, with the Hound overcoming his fear of fire - but regardless of that, it's really difficult to see how or why he'd make it out of Winterfell alive.
