What was he doing at the time?

"Showtime" Percy Watson was a cult favourite wrestler on a cult favourite show. The problem was, that show was gameshow era NXT, and it became such a graveyard for careers and bad ideas that the whole brand required a shift to Full Sail University under new gaffer Triple H to provide tangible value. Watson scaled back his presentation, but WWE scaled back his push. Defeat to Jinder Mahal signposted where both were headed, and he worked his last match for the brand in 2013. 

What is he doing now?

Nothing in wrestling, as of last note. Watson took up something of an indistinct role at the commentary desk in WWE between 2016 and 2019, covering the likes of NXT, 205 Live, Main Event and various other cross-brand specials. When he left the company, all reports suggested it was to do things outside of the industry and they've so far proven true. He moved into acting, having made appearances in The Walking Dead and Chicago Fire.
