Odin is the god of royalty, death, healing, and load of other things. What he's god of depends on what you read and when it was written, but a common thread is that he's a big deal. His most likely place in God of War is similar to that of Zeus, as king of the gods and the ultimate authority figure.

Like the rest of Norse mythology, though, Odin changes so much over time he could be encountered in a variety of guises and fulfill a very different role to the one players expect.

Odin is accompanied by various legendary animals, including his wolves Freki and Geri and his ravens Huginn and Muninn, as well as his eight-legged horse Sleipnir, all of which are begging to show up in the game.

He has a habit of showing up in disguise to trick or test people, so potentially anyone or anything Kratos meets could be the one-eyed god of kings.
