Much like Assassin's Creed, a lot of Horizon's basic stealth components come from monitoring yellow 'awareness' icons above enemies' heads, and freaking out/reacting accordingly if they turn red.

To that end - and again, just like AC - once an enemy is about to go into their alert phase, they'll do a "I'm reacting to your presence" animation (usually involving a flailing of the arms for the humans).

During this animation, the game hasn't 'switched' into combat mode, and if you're close enough, you'll still get the R1 'stealth kill' prompt. Pull this off, and even if an enemy has yelled in your direction or otherwise made a noise, taking them out means nobody else reacts or calls in the cavalry.
