Sapphire Falls has some great dining options to try out. You can get everything from a sandwich to a rotisserie in the eateries here.

Amatista Cookhouse is located right next to the boat dock area and serves food throughout the day. I ate there a few times for breakfast which was very tasty (mmm bacon). There was a mixture of hot buffet food and an Al La Cate menu. The Al La Carte menu had everything you could possibly want, Eggs Benedict, pancakes and cereals. Lunch and dinner is served from a menu but there is also a rotisserie. Amatista is a casual restaurant with a bar just off to one side if you want to grab a drink after your meal.

The New Dutch Trading Co. is a quick grab and eat place where you can get coffee, pastries and sandwiches. There's also a pantry section where you can pick up snacks. You can also get little s'mores kits that you can use on the fire pit outside. The store also sells ice cream because are you even on vacation if you don't have an ice cream.

My absolute favourite place to eat was Strong Water Tavern. The hotel's bar has a great tapas selection with some rather delicious foods to try, most of which have a Caribbean flavour. I really loved the shredded beef and the seafood tostada.

Strong Water Tavern also has a large selection of rum based drinks, you can even get a rum flight where your server will talk you through them.

The atmosphere of the bar is very relaxed and casual. Whilst I was in there college football was playing on the large screen television. You can also make the most of the warm Florida evening by sitting out on the terrace and enjoying the views over the water.
