The best Star Wars novel in the new canon is unquestionably the original Star Wars: Aftermath by Chuck Wendig. No other Star Wars novel (that's still canon) perfectly encapsulates the Star Wars experience. Even though the other two novels in the series are just as good as this one, Aftermath was one of the first high profile Star Wars novels to be released under the Del Rey name and thus has that brand new aspect to it.

Aftermath chronicles the journey of a lot of characters, most notably Nora Wexley, a rebel veteran and one of the lead fighter pilots in the assault on the Death Star, who has returned to her home planet to reconnect with her estranged son. On the opposite side is Admiral Rae Sloane, the commander of the final Imperial Super Star Destroyer, who is trying to establish a new Imperial high command council from the remaining dregs.

There are a ton more characters and story to this book than that, but this author highly recommends you check it out and read for yourself. Star Wars Aftermath is the best canon Star Wars novel thus far.
