6. The Fall Of Count Dooku - Star Wars: Episode II - Attack Of The Clones
One of the better parts of the prequel trilogy was getting to see the legendary Christopher Lee in his natural habitat - playing a campy bad guy.
Lee's turn as Count Dooku in Star Wars: Episode II - Attack of the Clones and Episode III - Revenge of the Sith inspired multiple subsequent appearances from the character in expanded media, but in the core movies, little is known about him except that he used to be a Jedi and was once mentor to Qui-Gon Jinn.
That's not much information, especially considering he's basically the main baddie of the second film, which is where this handy piece of exposition comes in.
In this deleted scene, whilst in the Jedi archives, Obi-Wan Kenobi is staring at a bust of Dooku's face when he is joined by librarian Jocasta Nu. The old lady proceeds to fawn over Dooku, claiming he was "one of the most brilliant Jedi" she had ever met.
The scene adds some much-needed context to the Count's character, explaining that he left the Order because he had given up on the idea of the Republic. These ideas would ultimately be fleshed out in the canon novels Master and Apprentice and Dooku: Jedi Lost, as well as the Star Wars: Tales of the Jedi animated series.
It's not the most exciting conversation in the world, but more Jocasta is always a good thing.
