One way to keep Tony Stark involved in the goings on in the Marvel Cinematic Universe, once he perhaps gets a little too old to be donning the Iron Man armour and battling evil, could be to make him a consultant to the Avengers who only appears briefly to discuss strategies, plans and equipment with the heroic team. His trademark wit, humour and charisma would be badly missed if he disappeared from the franchise completely, so giving him a role in which he could appear from time to time - even if it was just briefly, in cameo roles - would be a nice compromise for both those people who love the character and those who are getting a bit sick of him. Interestingly, Stark has already been referred to as a consultant in the Marvel One-Shot "The Consultant", whereby he was sent to annoy General Ross so much that he wouldn't go through with allowing Emil Blonsky to join the Avengers Initiative.
