Avengers: Infinity War was the biggest MCU film upon its release, stuffed with over 50 characters. Many of the characters and story arcs were changed, swapped around, or removed entirely. One aspect that remained the same from the original script was Thor's story arc.

According to the writers, they always intended Thor to seek out an enchanted hammer, believing it was the only weapon that could vanquish Thanos. In the finished film, Thor heads to Nidavellir to track down Eitri; the forger of the original hammer, Mjolnir, and encouraged him build a new hammer called Stormbreaker.

Concept art on the Infinity War DVD reveals Thor was supposed to find Stormbreaker inside a cave, which was guarded by a colossal dragon. Naturally, the God of Thunder would have to fight the gargantuan beast in order to claim his prize.

This would have been an entertaining fight but Eitri scene is far more emotional. Peter Dinklage perfectly depicts the character as a tragic figure while simultaneously having the funniest lines in the film. A fight with a dragon would have been fun but a bit generic so this change was probably for the best.
