Thanos has more screen time than any other character in Avengers: Infinity War. Even though he is the villain of the story, he is technically the main character. This was a wise decision as it gave the writers plenty of time to flesh him out. Despite this, the filmmakers didn't fit in every single idea they had for Thanos.

The directors, The Russo Brothers, felt like they needed a scene depicting Thanos as a child or as a young man to show how he started off as a timid outcast but gradually turned into a genocidal maniac. Creative director, Ryan Meinerding, devised sketches of Thanos as a boy and a young adult but his work was never implemented into the film. Since Infinity War and Endgame were already three hours, the directors realised they couldn't fit every idea in and so, had to remove Thanos' origin.

Instead, the directors cleverly condensed Thanos' entire history into one scene where he explains his philosophy to Doctor Strange. We may not have seen Thanos' backstory but this single scene made us completely understand what he is trying to accomplish and why.
