1. Remus Lupin
Of course Lupin was Harry Potter's best Defence Against the Dark Arts Teacher. Though anyone who wasn't actively trying to kill the boy who lived, werewolf state excluded, would have made it high on this list by default, Remus was actually a brilliant teacher, and not just compared to the likes of Umbridge or Quirrell.
From their first meeting on the train, where he defended Harry against the dementors, Lupin gave Potter the time and attention he required, and as an old school friend of James Potter, cared for him. After immediately impacting Harry's life, Lupin continued throughout the school year. He actually taught his students, making them better witches and wizards with useful spells such as how to get rid of a boggart.
More importantly however, Remus showed Harry how to fight dementors with the use of the Patronus charm, relaying the lesson of positivity and happiness in the struggle against darkness. Lupin made a real connection with Harry like few others did, and was not only a major influence through his time at Hogwarts, but acted as a father figure and connection to the life the boy who lived could have had if not for Lord Voldemort.
