3. Defeated The Emperor Himself - Dark Empire
Like I've been saying throughout this list, if the old EU had one cardinal sin, it would be hyper focusing on making Luke the most unstoppable badass in the entire universe. The main problem with this was that there was one glaring loose end with that thread: he never even put a scratch on the Emperor. Obviously this must be rectified, hence Star Wars: Dark Empire.
Obviously, since this is a universe where clones are very much a thing, getting rid of a bad guy for good in Star Wars is kinda hard. So it should come as no surprise that the Emperor comes back, and in a much younger body that can take full advantage of his supreme cosmic power.
We'll spare you the truly staggeringly stupid plotline of Luke turning to the dark side except not really (don't ask, it's dumb), because the point of all of this is that Luke finally faces off against the Emperor and proceeds to kick his ass six ways from Sunday.
And remember, this wasn't the frail easily-thrown-over-a-railing Palpatine, this was a clone body built to be in its absolute physical prime. Making the fact that Luke was still able to bring him down even more impressive.
