Ahsoka Tano, after appearing in The Clone Wars and then re-emerging in Rebels, is perhaps the biggest fan-favourite canon character outside of the movies (or at least second only to Thrawn).

She served as the Padawan of Anakin Skywalker during the Clone Wars, working together (although not always in harmony) on a number of dangerous missions, before she left the Jedi Order after being framed for the destruction of a Jedi Temple.

She went underground, working with Bail Organa to combat the Empire's rise, and eventually resurfaced to work with the Rebels of the TV show - bringing her into contact with her old master, now in the guise of Darth Vader. She's had one of the strongest character arcs outside of the movies, and a whole lot of power to go with it.
