Chirrut's costume very much feels like a blend of war uniform (there's a distinct World War 1 feel to all of the costumes thanks to the colours and the cut around the shoulders) and his spiritualism.

Here's his description from the exhibition:

"Deeply spiritual, Chirrut Îmwe believes all living things are connected through the Force. His sightless eyes do not prevent him from being a highly skilled warrior. Though he lacks Force abilities, this warrior monk has rigorously honed his bodies through intense physical and mental discipline."

He definitely feels like he's wandered out of another genre entirely.
