4. Fallout: New Vegas
Fallout's first foray into post-apocalyptic Nevada ended up a more complete package than The Sith Lords could ever have claimed to be, but there were cuts. Lots and lots of cuts.
A near-exhaustive list of content Obsidian left on the cutting room floor can be digested here, courtesy of Moburma, who notes that much of the eschewed assets were thrown in the trash, not because of time constraints, but redundancy and/or tonal inconsistency.
Despite that, Moburma has since created a series of mods that reinstate the cut content to its respective location on the sun-scorched map and can be grabbed for personal use here.
They range from an alternate opening sequence to restored, fully-voiced NPCs, side quests and restructured areas. The highlight, though, is Betsy the Brahmin, a companion that accompanies the player's Courier, serving as a pack mule to hold all the junk accrued while roaming the wasteland.
Just don't expect her to save your bacon in any heated combat situations.
