If you hadn't learned how to plunge attack properly from the Asylum Demon, The Taurus Demon is basically a refresher course.
This guy can be cheesed in so many ways, he's basically a walking pot of fondue. You can lead him off the edge with his own attacks, abuse the plunging attack mechanic, and of course the tried and tested "let him jump up to the second stage, attack, drop down, let him drop down, attack, climb up and repeat combo".
Bless him, at least he's trying.
