9. A Scalpel - Hannibal

As a follow-up to The Silence of the Lambs, Hannibal fell some way short. However, it did offer glimpses of horrible brilliance, largely thanks to the fact that, unlike with Anthony Hopkins' first turn as the character, he was the prime antagonist here.

On the run from Clarice Starling (Julianne Moore) and the FBI, Hannibal did some truly heinous things, but the toughest to stomach was without question what he put Paul Krendler (Ray Liotta) through. Everyone knew what Hannibal was at this point, but actually seeing it happen was something else completely.

Entertaining Clarice for tea - against her will, of course - the cannibalistic artist proved how he earned a reputation as such. A particularly docile Paul sat next to him, with it not being revealed why he was acting so strange until Hannibal removed his hat. The escaped killer had scalped his victim, exposing his brain and allowing the chef to source his meat as freshly as possible.

Yes, Hannibal took a scalpel and sliced a small part of Paul's brain off, and threw it straight into the pan. Clarice's hysterical reaction was not only completely justified, it probably matched what just about everyone thought watching it. The delicacy, the precision, and the indifference with which Hannibal did this was a stark contrast to the act itself, and only made it harder to stomach.
