He tolds his hand open - not uncommon in MMA to be sure - then tends to use his reach, and basically extend his arm out in front of him to make distance between him and an opponent. At times he'll go as far as to place his hand right on an opponent's head. That part isn't exactly common, but it would be just fine if he didn't "miss" so often, and end up poking opponents in the eye. Of course in the world of MMA where every little advantage is key, many question just how accidental these eye pokes really are. Which is a fair question, though we should give the benefit of the doubt to Jones. Jones, however, isn't one to take such criticism quietly. He posted a video mocking fans for criticizing the potentially dirty move on his Instagram, then hastily deleted it, but you can see a clip of it above along with the response from Tommy Toe Hold.
