Daniels wasn't a member of Starfleet in his own century — the 31st — but he was in uniform serving Captain Archer his breakfast on the NX-01 in the 22nd. By the time we met him in the episode Cold Front, he'd been faking it aboard ship as an enlisted man for several months i.e. (we assume) since Enterprise left space dock. Daniels hadn't come all that way from the future just to play crewman (third class) and get the scrambled eggs right.

At least, in this case, the sneaking into Starfleet was done for noble reasons. Well, everyone had a vested interest in the Temporal (Cold) War(s), but it's safe to say that Daniels was more than just on the right side of history here. In reality a temporal agent, Daniels had been assigned aboard Enterprise to capture shady Suliban Silik, who was working under orders from the literally shadier 'Future Guy'.

As part of his crewman cover, Daniels certainly did a number on his backstory, even inventing himself a 22nd century brother. Out of the Starfleet garb and into his 31st century attire, he continued to be useful — and sometimes an untimely pain in the arse — to Archer and the NX-01 crew, providing key intel after the Xindi attack, for example. Daniels also features highly in Star Trek: Online across numerous missions of the game. Of particular note here is that, in the 'Agents of Yesterday' expansion, Daniels gets a promotion in his Starfleet undercover work to become 'Ensign Hunter' in 2270.
