Transformations, the bread and butter of Dragon Ball Z, Super and even GT! Imagine a world where you don't have to dye your hair before you can fight your opponent, oh the horror.
In large part due to DBZ establishing the trope, transformations are iconic, not only in Dragon Ball, but anime as whole.
As you might have guessed by the title, this list will contain the most memorable transformations in all of Dragon Ball history. Feel free to disagree, but I doubt anyone disagrees that Ribrianne's transformations is the greatest in all of anime itself.

Concerning Ultra Instinct, while it is a technique it does transform Goku both physically & emotionally so it belongs in this list. Conversely, Kaioken is a technique without any attitude or physical transformations so is not included in the list.
10. Vegeta - Great Ape
Vegeta, a threat so great that it took all of the remaining Z Fighters combined to hold him off & finally take him down. Now, just how terrifying would such a man be if he were to become a gorilla the size of a building & increase his power 10-fold?
Vegeta's power level as a Great Ape was 180,000. That's more than Captain Ginyu for goodness sake!
What's most memorable and impressive about Great Ape Vegeta is that he was the first Saiyan we ever saw to be able to actually control this berserk transformation. Goku killed his grandpa, destroyed a castle & half a tournament ground before he lost his tail privileges for good. Similar situation with Gohan.
However, Vegeta not only controlled his transformation but actively used it whenever he found himself in an extremely difficult bind. This spoke volumes about not only his prowess but the utility of the transformation that had always been more of a liability than an effective thing to do during a fight (if the moon was out).
A man with the height of a ten-year-old growing to the size of King Kong is most definitely memorable.
