Speaking of one-season wonders, it's almost impossible to talk about such things without mentioning the definitive one, Joss Whedon's space western Firefly.

Fox infamously messed about with the broadcast, and then cancelled it when ratings weren't great as if the two weren't linked. Since then, it has gained a massive following, spawning a movie - Serenity - and a comic book series.

It's easy to see why. The show expertly blended its two genres, and had all the hallmarks we've come to expect from Whedon: sharp, witty dialogue; a great cast and characters; an offbeat nature and premise; and themes of power (and powerlessness), existentialism, and anti-authoritarianism. It's a must watch, but you will be left crying that there isn't more.
