A quick run down of a few things that were going on in Season 8 that weren’t the defence of Winterfell or the sacking of King’s Landing.

Yara Greyjoy retakes the Iron Islands from Euron.

A new and unnamed prince is crowned in Dorne.

Cersei prepares the capital for a siege.

Edmure Tulley is released from prison.

Tyrion wrestles with his feelings for Dany.

Sansa becomes the Northern Lords choice as leader.

The Second Sons govern entire cities Essos in Dany’s name.

Meera Reed reunited with her father Howland Reed, who knows the truth of Jon’s parentage.

Gendry steps foot in Storm’s End for first time as it’s Lord.

Bronn journeyed all the way from King’s Landing to Winterfell.

Arya and The Hound journeyed all the way from Winterfell to King’s Landing.

The Golden Company presumably do something.

Hot Pie exists

All of these either happened offscreen or weren’t even acknowledged. None of them are anywhere near as important as the events the show chose to focus on, sure, but Thrones of yore would have found the time for them.
