We waited four years for Gendry's return, after he was sent rowing from Dragonstone by Davos, but he only made brief appearances before disappearing again (and it's not even clear just where he went).

He will be back for Season 8 though, and be a part of the fight against the White Walkers. And really, there's not much point in having him serve as a dangling plot thread for four seasons if you're just then going to kill him off.

Although by the end of the season the wheel will be broken, out of the ashes of the Great Houses Westeros can be reborn. Gendry is the last of the Baratheons, and having all four of the major houses that started the series still going by the end, ready to rebuild the world, is a nice sign of how history repeats itself and things come full circle, which are recurring themes of the series. Also, it means he can live happily ever after with Arya, because the show needs to balance some happiness with the misery and death.
