Well, surprisingly, he farms, probably.

Asked whether Lesnar might transition into a management role after he retires from UFC and WWE, Heyman rejected the idea out of hand, because there are bigger concerns on his mind and in his heart. And before he gets to that, he's going to make sure he goes out at the top of his game as an in-ring personality:

"I see Brock Lesnar performing at the highest level of any athlete in the history of UFC and WWE and I see him walking away while still on top. This is what I always say on television: you're not going to get that many more opportunities to see Brock Lesnar do his thing. So when Brock Lesnar performs, whether it's in an Octagon or WWE ring, it's a rare and distinct and unique opportunity to see the greatest athlete of this generation - a once ever athlete in his prime do his thing at a level no-one else can compete with."

So what will he do beyond that point? After combat, after the ring, and after he's no longer a Heyman guy? Heyman says he sees him "buying more farm land in Saskatchewan. The man is a farmer, he loves to farm. It's what's in his heart, it's what he'll be passing on to his family. Performing and fighting enables him to buy more farm land."
