Punk may not fight until November 2015, but the UFC will see that he's good value for two fights in 2016. Chances are that the second one will be another rookie like the first, but the third fight could be the moment to roll out Bisping (which Punk will most probably lose). Even if Punk loses all three of those fights, UFC will have extracted value out of his fame. Chances are he'll get at least one win and be retained for future fights in 2017 - it is a multi fight deal and Punk plans on fighting into his forties.
