The conventional way WWE try to create vulnerability in situations like this is to send the hot favourite into the contest weakened. In fact this is the technique being employed right now with John Cena, who is selling a knee injury designed to give Bray Wyatt a better perceived chance of victory. WWE should also run this angle with Undertaker and Lesnar. The obvious segment to do is Lesnar breaking Taker's arm with the kimura, which would then tell the story that Brock is favourite for Mania because he is facing a man with only one arm. Would that detract from the match? No. Wrestling is all about storytelling, Undertaker and Brock could tell a story built around the fact that Taker has to overcome the odds with an arm rendered useless. Brock would work on the bad arm repeatedly and Taker would be unable to use his trademark moves - the vulnerability would be there so that when Taker does win it seems more of a satisfying achievement.
