7. Viggo Mortensen - The Hateful Eight

The Role: Jody, a pivotal part in the movie though we won't say anymore than that as the movie is so fresh, which ultimately went to Channing Tatum, but was initially offered to Mortensen, who had to refuse due to conflicting schedules. Why They Regret Turning It Down: The only movie Mortensen has awaiting release is drama Captain Fantastic, so did he reject Tarantino over some little Sundance movie that may ultimately go nowhere? Either way, it would've brought Mortensen's profile back to the A-list, considering that he's been flying pretty low on the radar over the last few years, opting for more art-house flicks than big studio ventures. Plus, it's Tarantino for Christ's sake: when he comes a-knocking, you answer. Would It Have Worked?: It's hard to imagine Mortensen screwing this up, though at the same time, QT ultimately opted for a much younger actor for the part, so his vision for the role clearly shifted once Viggo turned it down. But seeing him chew his way through the filmmaker's legendary dialogue would've been quite a sight to see indeed.
