3. Jocasta Nu

Jacasta Nu makes a brief appearance in Attack of the Clones as the Chief Librarian of the Jedi Archives, where she informs Obi-Wan that Kamino was not in the archives and therefore did not exist. Nu's incredulous response to Kenobi's investigation didn't exactly endear herself to viewers first time around, but there's plenty about Nu in the expanded canon that makes her one of the more interesting Jedi of the prequel era.

First off, Nu actually served on the Jedi Council prior to the events of The Phantom Menace, and trained as a Consular Jedi (a member of the order who prioritised scholarship over peacekeeping). It was heavily implied in the Master and Apprentice novel by Claudia Gray that she and Count Dooku were extremely close before the latter left the Order, and Nu's actor, Alethea McGrath, even claimed that material cut from Episode II would've revealed they once had a romance.

Jocasta Nu was also one of the few Jedi to survive Order 66, and was designated a high priority target by Emperor Palpatine due to her unrivalled knowledge of the Jedi Archives. Nu attempted to build a new school whilst preserving as much of the Jedi's history as she could, but eventually returned to Coruscant when she realised a holocron containing a list of Force-sensitive children was sealed off in a secret area of the Jedi Temple.

Nu would duel the Grand Inquisitor and Darth Vader in this encounter (which also led to the death of clone Commander Fox), even fashioning a lightsaber rifle to ward off the former Jedi, but sadly died at Vader's hand after revealing his former identity as Anakin Skywalker to his shock troopers.
