As far back as 1989, former member of Monty Python, Terry Gilliam, became obsessed with the idea of adapting the novel Don Quixote. Gilliam's eventual story would follow the attempts of a somewhat unhinged old man, who seeks to revive the old notion of chivalry. It took Gilliam over two decades to the get the job done.

Lost In La Mancha chronicles Gilliam's tortured attempts to make his movie back in 2000. Gilliam's project soon became inundated with problems; from the constant noise of planes drowning out sound, to extreme weather destroying his sets. Like many of the filmmakers mentioned on this list, Gilliam slowly started falling apart during the production process, ultimately leading to the film being scrapped. Over the years, several other attempts to complete the project also failed, with John Hurt, Johnny Depp, Vanessa Paradis, and Ewan McGregor all being involved at various stages.

He Dreams Of Giants was a follow up documentary detailing how Gilliam eventually saw his vision complete with his 2018 film, The Man Who Killed Don Quixote, starring Jonathan Price and Adam Driver.
