He might not be quite as well-known as some of the more active current Fox-owned properties, but Man-Thing deserves a fair crack of the whip as a movie (or TV) character. Just imagine the creative world coming full-circle and Neil Gaiman (who was influenced by Steve Gerber's classic run) penning something dark and glorious for Marvel to make.

And given how well the MCU has done with Groot so far, they have precedent of making inhuman monster characters sympathetic, and honestly, the idea of them approaching Man-Thing that way again is just irresistible.

There has already been a Man-Thing movie (in 2005), but it was mostly unwatchable, and most seem to have forgotten it even exists. And there is certainly scope for Marvel to do something more horror focused as a side-concern of the MCU (particularly as there are whispers of a Blade movie in the near future). If they can do sci-fi, comedy and straight action, there's no reason why not.
