Beyond everything already said, the most jarring development across the Harry Potter movies was the way that the original sense of wonder at pure magic began to decrease as the series went on. Part of this will be the change of directors, with Chris Columbus' making way for angsty, moodier filmmakers, but it's more down to the wider presentation of the wizarding world; many of the zany, whimsical inflections were sanded off, losing much of the books' identity in the process.

Some of this is unavoidable. Of course things are going to change as the characters mature and the threats become more deadly, but there's a difference between adjusting tone and totally redefining the world. Even when we're dealing with the Battle in the Ministry or Horcruxes, there should be a link back that makes the series feel the same.

That magic, the whimsical feel, is what's at the heart of Rowling's books and made them such successes, and to toss that aside for generic fantasy inflections is a massive waste of potential. Many of the other key steps, especially the balance of the coming-of-age story need this deft balance to work, and if we ever are lucky enough to get a proper remake of Harry Potter, it's what the director/writers/showrunner should focus on.
