Toying with and torturing Rey (Daisy Ridley), and in turn giving Kylo Ren (Adam Driver) a ripe opportunity to launch a stealthy, fatal Force attack against him.
What They Should've Done
Snoke should've snapped Rey like a twig as soon as Kylo Ren brought her to him.
This would've served numerous functions: Rey would now be dead (of course), Ren wouldn't be able to use her as a shield for his assassination attempt on Snoke, and he likely also wouldn't be able to fend off Snoke's Elite Praetorian Guard on his own even if he did try to kill Snoke. And so, Ren probably wouldn't have even made an attempt, at least not in this moment.
Would Ren have tried to kill Snoke some other time? Sure, but with Rey dead, Snoke's life expectancy would've enjoyed an immediate uptick, and Ren would've had to make an extra special effort to catch Snoke off-guard.
That's not to forget the lingering Luke Skywalker (Mark Hamill) element either, mind, but with Luke's young protege dead, the future of the Jedi Order would've been looking pretty damn bleak.
