It was a tough call between this line and the "genius, billionaire, playboy, philanthropist" line in the Avengers movie but, bearing in mind the character development that occurred in the Avengers movie after Stark said this, as well as the subsequent character development that occurred in Iron Man 3, this line from the first Iron Man movie is more apt for Tony.

Tony proved himself to be more than the arrogant and self-righteous man that the "genius, billionaire, playboy, philanthropist" suggested he was and he truly became a hero. In the Avengers movie, he took what he thought was going to be a one-way trip in to Loki's portal to save the world and he fought valiantly again in Iron Man 3. He truly earned the title of "Iron Man" and the superhero status that came with it (and this quote expresses that without disposing of Stark's vanity, which will always be a trait of his).
