3. Ahsoka Tano
A character this good needs an entry all to herself.
If you want a walkthrough on the heights the Star Wars extended universe can reach when put in the right hands and given the time and funding needed to do what it needs to do, then you look no further than Ahsoka Tano.
While she didn't make the best first impression in the world - first appearing in the thoroughly mediocre Star Wars: The Clone Wars movie - Ahsoka quickly won over the fandom through her appearances in the television show that came out soon after. Out of all of the characters in that show, Ahsoka is the one who goes through the most noticeable development.
When we first meet her, she's around 14-15, and as the show goes on, we follow her as she matures into a young woman and a capable Jedi. And even after Clone Wars we get to see her further develop in spin off novels and in Rebels where it's established that she becomes a powerful Grey Jedi after leaving the Jedi Order.
Ahsoka's journey just would not have been as interesting if she only appeared in short, finite movies.
