In Avengers: Age of Ultron, Scarlet Witch uses her hex powers to remove the Incredible Hulk's personality, turning him into a mindless beast. The director, Joss Whedon, wanted the Jade Giant's appearance to change in this scene to highlight his savagery.

The original idea was for the Hulk's skin to turn grey after Scarlet Witch messed with his mind. It's common knowledge with comic fans that Hulk was grey in his debut comic. When Marvel realised the colour grey aged badly, they decided to make the Hulk's skin green.

Whedon thought it would be a nice bit of fan-service for the Hulk to be depicted with grey skin for the first time on the big screen. When Whedon realised that animating Hulk in a different colour would be time-consuming and expensive, the director changed his mind. Instead, he made the Hulk's eyes look more sullen so he would appear more animalistic.

When The Avengers realise they couldn't control the Hulk, they would force him into a vessel that would be launched into space. This would have been an emotional scene and would have perfectly set up events in Thor: Ragnarok when the Hulk confronted Thor.
