Sarah Carter is a pretty strong character even before she has to defend herself against monsters. She's dealing with tremendous grief, forced to move on with her live after her husband and daughter die in a car accident. She tries her best to live her life by her husband's motto, "Love each day." 

Sarah travels into an unexplored cave system with her friends and becomes trapped. She’s the first one to see the strange humanoid creatures living down there, though everyone else thinks she imagined it. Sarah goes through a lot in the last act of the movie, being captured by the creatures, watching many of her friends die, killing one of her friends to put her out of her misery, and defending herself against dozens of crawlers without any help. Yes, she’s able to survive in a dark cave full of monsters completely on her own.

In the second movie, Sarah is sent back into the cave in a plot very reminiscent of Aliens. After everything that happened the first time and after being trapped in this cave system again, most people would probably just give up, but not Sarah. She continues fighting, killing more crawlers, and making it to the end once again. By the finale of the second movie, these monsters should be terrified of Sarah Carter.
